4 Delicious Drinks Recipes to Use Up Your Halloween Pumpkin Leftovers

Whether you're throwing a monster Halloween bash or just want indulge in something a little special, there's no better way of using up your leftover pumpkins than to turn them into deliciously indulgent drinks. We've scoured the web for ideas and picked out four of our favourite pumpkin-inspired beverages to make this Halloween one to remember.

You’ll need to make homemade pumpkin purée for these recipes: chop the pumpkin leftovers into chunks no more than 2cm thick; place them in a large saucepan with water and bring to the boil; cook for 30-40 mins until tender; drain and purée with a food processor (use within 3 days).

Pumpkin Spiced Latte

Pumpkin Spiced Latte

Everything you need to make a spicy, frothy pumpkin spiced latte at home. Blend well to give you a smooth, grit-free drink with a perfect coffee shop foam.

COOK TIME: 8 mins

Ingredients

  • 1 pint Dark brewed coffee or espresso (we recommend our Guatemala Elephant Coffee)
  • 180ml Almond milk
  • 180ml Coconut milk
  • 80ml / 5 tbsp Maple syrup
  • 3 tbsp Pumpkin purée
  • 1 tbsp Pumpkin pie spice
  • 1/2 tsp Vanilla extract

Instructions

  1. Combine all of the ingredients in a saucepan over a medium-high heat.
  2. Simmer for 5 minutes, whisking occasionally, until heated through and slightly frothy on top.
  3. Carefully transfer the liquid to a blender and cover the top with a towel. Blend on high for 30 seconds until foamy. Alternatively, use a handheld blender in the saucepan.
  4. Divide between 4 mugs and serve.

Creamy Pumpkin Hot Chocolate

Creamy Pumpkin Hot Chocolate

Warm up your guests in no time with this delicious pumpkin hot chocolate. You can’t go wrong with this creamy and delectable drink.

Ingredients

  • 1 pint Milk
  • 1/2 tsp Vanilla extract
  • 3/4 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 2 tbsp Brown sugar
  • 120ml Pumpkin purée
  • 1/8 tsp Ground ginger
  • 4 tbsp Good quality cocoa (we recommend our 70% Cocoa Hot Chocolate)
  • Whipped cream

Instructions

  1. Heat the milk over a low heat in a saucepan.
  2. Stir in the pumpkin puree, sugar and dry spices and whisk until smooth.
  3. Add the cocoa powder and continue to heat for about 8 minutes, stirring all the time.
  4. Garnish with whipped cream and nutmeg, if desired.

Chai-Infused Pumpkin Pie Smoothie

Chai-Infused Pumpkin Pie Smoothie

A healthier alternative, but packed full of flavour. Warming and invigorating, it creates a comforting sense of well-being, and is a fantastic drink for a hot summer's day or a long cold night.

Ingredients

  • 160ml Unsweetened almond milk
  • 1 tsp Chai tea (we recommend our Mumbai Chai Loose Leaf Tea)
  • 3 tbsp Pumpkin purée
  • 1 tsp Vanilla extract
  • 1/2 tsp Pumpkin pie spice
  • 2 Frozen bananas

Instructions

  1. Combine all the ingredients, except the banana, in a blender and blend until the tea has completely broken down.
  2. Add the frozen bananas, preferably in small chunks for even blending, and blend until smooth.
  3. Serve in a chilled glass and enjoy!

At Roast bar and restaurant in London's buzzy Borough Market, the signature Halloween cocktail is the Pumpkin Bite – a devilishly good mix of pumpkin purée, rum and cranberry juice, served in a hollowed-out pumpkin.

Ingredients

  • 50ml Good quality rum
  • 15ml Sorrel cordial
  • 15ml Ginger liqueur
  • 35ml Pumpkin purée
  • 35ml Cranberry juice

Instructions

  1. Put all the ingredients in a cocktail shaker and shake.
  2. Pour into a hollowed-out pumpkin.
  3. Add a scoop of crushed ice and serve with a straw.
