Masala Chai, or mixed-spice tea, originated in India, where recipes vary from family to family, but the inspiration stays the same. Whittard's Mumbai Chai is a delicious balanced blend of black tea, ginger, cinnamon, cardamom, black pepper and cloves.
This tea is best prepared light and black, but can also be enjoyed in the traditional method brewed strong and with lashings of warm milk and lots of sugar.
Ideally warm the pot first with a splash of hot water. Use one teaspoon (around 2g) per cup and always use freshly drawn and boiled water. Allow to brew for 3-5 minutes according to taste. Can be drunk with or without milk.
