Fun Wellbeing Recipes

We’ve been getting creative with some of our fruit and herbal infusions, conjuring up some fun, healthy (and seriously delicious) recipes. From Sweet Slumber cookies to Coconut Carnival energy balls, they’re the perfect way to treat yourself without feeling guilty. So pop the kettle on, tie up those apron-strings and let’s get started!

 

Sweet Slumber Cookies

(Makes about 30 cookies)

  • 2¾ cups (330g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 5 Sweet Slumber teabags
  • ½ tsp salt
  • 1 cup (240g) unsalted butter, softened
  • 1 cup (200g) sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • Zest of 2 large lemons
  • 2 tbsp fresh lemon juice
  • 6 tbsp honey
  • ½ cup sugar for rolling cookies, in a bowl

Preheat the oven to 180°C.

Cut open the teabags and empty into a food process, then blend until fine. Sift through a fine sieve or tea strainer into a medium bowl, and combine with the flour, baking soda, baking powder and salt.

Blend the butter and sugar together until light and fluffy, then beat in the egg, vanilla, lemon zest and juice, and honey. Slowly add the dry ingredients, mixing until just combined.

Roll out the dough into teaspoon-sized balls, then roll each ball in the bowl of sugar. Drop onto a parchment-lined baking sheet, about an inch apart.

Bake for 10–12 minutes or until lightly browned. Allow to cool, then tuck in!

Blueberry Bliss Overnight Oats

  • 1½ cups (355ml) water
  • ⅔ cup (60g) rolled oats
  • 3 Blueberry Bliss teabags
  • Fresh blueberries to top (or whatever alternative you like)

Bring the water to a boil, and infuse the teabags for 2–3 minutes. (You can let them infuse for longer, depending on how strong you’d like the flavour to be.) Carefully remove the teabags and allow the water to cool for a few minutes, then add the oats.

Refrigerate overnight. Enjoy as a morning treat – you can add milk, yoghurt, fruit, honey, sugar, or your choice of topping.

Rhubarb & Strawberry Smoothie

  • ½ cup (90g) rhubarb, diced
  • 1 cup (175g) strawberries, frozen
  • 120g Greek yoghurt
  • ½ cup (118g) water
  • 2 Rhubarb Punch teabags

Bring the water to a boil, and infuse the teabags for c. 5 minutes. Add the infusion to a blender with the other ingredients, blend until smooth, and serve.

Coconut Carnival Energy Balls

  • 1 cup (175g) dried pitted apricots
  • ½ cup (90g) pitted dates
  • 1 cup (175g) cashews
  • ½ cup (90g) shredded coconut
  • 2 Coconut Carnival teabags

Blend all the ingredients together, then roll into balls. Refrigerate until your next gym session.
