Whittard Spice Imperial Pancakes Recipe - Perfect for Pancake Day

This pancake day, we wanted to create something a little different to the run of the mill lemon and sugar pancakes. Now, there's nothing wrong with that, we love them in fact, but we wanted to push the boat out and try something that little bit more exciting. Cue the creation of Spice Imperial Pancakes, adding a little bit of spice with sultanas soaked in our Spice Imperial tea

Here's what you need to make about 15 small pancakes.


1 pot Whittard Spice Imperial tea
150g sultanas
200g self-raising flour
1 tsp baking powder
½ tsp cinnamon
Pinch of salt
1 medium egg
300ml milk
Golden Syrup to serve


  1. Make a pot of Spice Imperial tea, whether you prefer using loose tea or teabags. Pour the hot tea over the sultanas and leave to soak for 30 minutes.
  2. Sift the flour, baking powder, salt and cinnamon together into a large bowl. In another bowl, mix the eggs and milk together.
  3. Make a well in the dry ingredients and slowly whisk in the egg and milk mixture until you have a smooth batter.
  4. Drain the tea from the sultanas, add most of the drained sultanas to the batter, keep a few back for decoration.
  5. Add a little butter or oil to a non-stick frying pan, then fry your pancakes in small batches (3-4 at a time). One pancake should be about 1tbsp of batter. Fry each pancake for 2-3 minutes on each side. Keep frying until all batter is used up, keep your pancakes in a warm oven until ready to serve.
  6. Stack your pancakes up on plates, add a few of the leftover sultanas to the top and finish with a drizzle of Golden Syrup or honey. Enjoy!
