First developed in the 19th century as a very stable, fast and clean way of brewing coffee, the rather extraordinary Syphon from leading Japanese coffee technologists Hario is a coffee lovers chemistry kit. Loved by design aesthetes and coffee control freaks alike, the Syphons precise science of expanding and contracting air pressure allows you to monitor every element of the brewing process from the grind and the water temperature, to the time taken to extract the coffee and the quantity produced. Designed to maintain supreme stability of water temperature, with a cloth filter for an exceptionally clean taste, the result is a brew of unparalleled purity wed recommend trying with our Ethiopia Yirgacheffe, to highlight this coffees complex character and clarity of flavour.
The Syphon, in three steps:
- Add the desired amount of water to the lower chamber and light the flame, watching the water bubble through into the upper chamber.
- Add the coffee to the water, and mix well with the stirrer.
- Extinguish the flame- as the coffee cools it will be drawn back into the lower chamber, ready to pour and enjoy.

Hario Syphon Technicaon 03/04/2017I love this coffee maker. It makes great coffee and has a nice sciencey look. You can even use it with loose leaf tea.
The only problem I have with it is that Whittard doesn't sell replacement filters, which is a shame. However, you can get them on Amazon.

Nose to the Grind
Not sure which grind to use for your coffee maker? As a good rule of thumb, coffee makers using a paper filter are best with a finer grind, while those with a mesh filter benefit from a coarser grind. If you're cold brewing, we recommend grinding as coarsely as possible: this will give you a smooth cold brew without a hint of bitterness.
