Herbal rooibos tea from the Cederberg Mountains in South Africa is usually processed in a similar manner to black tea, turning the green, needle-like leaves to a rich russet colour as they react with the oxygen in the air. If you're fond of the naturally sweet, honeyed taste of rooibos and the fresh, verdant flavours of a good green tea, you might like to try this more unusual style of green rooibos, created by heating the leaves to stop the oxidation process.

The result is a lush, vibrant tea which blends beautifully with juicy tropical flavours of mango and papaya. A citrus twist of orange and a rainforest shower of cornflower petals make for a lovely-looking leaf - ideal for displaying pride of place on your kitchen shelf.

Brew the perfect cup

Add two teaspoons (around 4g) per cup and always use freshly drawn and boiled water. Allow to brew for 3-5 minutes according to taste. Best enjoyed without milk.

My husband is South African and he introduced rooibos tea to me about 11 years ago. The tea bags from supermarket are lacking flavour and aroma. I was over the moon when I found Strawberry rooibos tea in a local Whittard shop a few years ago. I became a fan immediately. I am very pleased to see that Whittard are continuing to work with this plant and keep on producing more wonderful infusions. Rainforest rooibos has a distinctive "green tea" quality. It's a light bodied tea with a slightly grassy taste but at the same time it is naturally sweet. Bright herbaceous aroma with a hint of the exotic fruit add another dimension to the taste. Just remember you need to brew this tea properly. 2-3 minutes is simply not enough. I recommend about 8 minutes, water - 100C.


South Africa

Herbal rooibos is unique to the Cederberg Mountains in South Africa’s Western Cape province, home to antelopes, leopards and lizards. The Khosian tribes had had been harvesting the leaves of the Aspalathus Linearis plant long before its discovery by the Dutch colonists, who applied the same process of oxidation used to create black tea. As a result, the green, needle-like leaves were transformed to a glowing red, giving the tea its name: rooibos or ‘red bush’ tea. As a herbal plant it’s caffeine free, and the only known source of the antioxidant aspalathin.
